Champagne-Infused Orange Strawberry Cake

This post is all about how to bake and create the cutest mini champagne infused orange strawberry cake. 

This recipe is perfect for anyone who wants to make an orange strawberry cake both with or without some champagne. Keep it kid friendly if you’d like, but these mini tiered cakes are PERFECT to add to a dessert table for an adult party too.

After perfecting my vanilla cake recipe, I’ve altered it into an orange flavored cake with strawberry frosting to make this delicious dessert.

For bakers of any level, this is a great DIY dessert to make your dessert tables look like they were done like a professional. So let’s get into how to make and build this champagne infused orange strawberry cake!

Cake Batter

To start, you will want to blend your butter, sugar and salt. Then add in the eggs, vanilla and orange extract, buttermilk and oil. Blend that together until combined, but don’t overmix. Lastly you will want to add the baking powder, soda, and flour.

Before you pour the batter into a pan, this is when I like to fold in the champagne and squeezed orange juice right at the end. Now you will pour the batter into a flat cookie sheet pan.

For the thin layers of cake for the tiers we will use a wider rather than taller pan for the cake batter.

While you throw the cake in the oven at 350F for 25-20 minutes, you will start creating the building blocks for the orange strawberry cake.

Let’s start with the strawberry frosting. I love this one because it combines powdered sugar with a strawberry whipped cream to maker a lighter whipped frosting which pairs very well with the champagne cake.

To start you will add the strawberry extract and red food dye to the heavy whipping cream. Beat that together for about a minute. Then add in the powdered sugar and mix on medium/high until beat the heavy whipping cream until peaks form. If you feel it is a bit too thick for your liking feel free to add a little milk.

Scrape this frosting into a piping bag with a large O tip or a plastic bag that you can cut the corn into a large O. 

The last two preparations are cutting the strawberry into slices for garnish and getting the champagne ready to layer between eat cake tier. Nice and easy!

Now comes the fun part! Assembling the orange strawberry cake. After you’ve let your cake cool for about 15 minutes, you can use a large circle cookie cutter to cut out the cake. Make as many as your cutter allows. Personally with my cake recipe I was able to make 4 3 tiered cakes.

The first step is to lay down the first cake round and spoon some champagne over the cake, which will soak it right in. You might be wondering, well doesn’t the cake already have champagne in it? Yes, but I like to add more for a final kick! And it adds a bit of moisture to the cakes as well. you will do this between each layer before adding frosting.

Take your piping bag of strawberry whipped frosting and create dollops of frosting throughout that layer. You don’t have to try to hard for aesthetic until you get to the top layer that won’t be covered by more cake. Now repeat these steps twice more until you’ve reached the final layer. 

Now try to make your frosting peaks as even and pretty as possible for the best presentation, especially if these are for a party dessert table! For garnish I added some yellow and pink sprinkles and then layered a semi-circle of the strawberries we sliced earlier.

And voila! Now we have the cutest champagne infused strawberry cakes. If it is a small get together, making 4 mini cakes from this recipe might be the perfect size. Champagne Infused Orange Strawberry Cake

Ingredients
  

Orange Vanilla Cake

  • 1 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/4 cup oil
  • 1/4 cup butter
  • 1/2 cup buttermilk
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 tsp orange extract
  • 1/4 cup champagne
  • 1/2 orange squeezed

Strawberry Frosting

  • 1 3/4 cup heavy whipping cream
  • 1 tsp strawberry extract
  • 1 cup powdered sugar
  • red dye

Garnish

  • 5 Strawberries (optional garnish)
  • Yellow and Pink Sprinkles (optional garnish)
  • Extra Champagne

Instructions
 

Orange Vanilla Cake

  • Preheat oven to 350°F
  • In a large bowl mix flour, baking powder, bakingsoda, and salt
  • In a medium bowl combine butter, sugar and salt then mix together
  • Mix in buttermilk, oil, eggs and vanilla and orange extracts until combined
  • Add in dry ingredients then blend until combined, but don't overmix
  • Squeeze in the orange juice and pour in the champagne and fold into the batter.
  • Pour batter into the baking prayed pan and bake for 15-20 minutes or until a toothpick comes out clean when stuck into the cake.
  • Let cake cool for 15 minutes

Strawberry Frosting

  • Pour the heavy whipping cream into a mixing bowl along with the strawberry extract and a few drops of red dye
  • Using whisk attachment, mix until the dye creates a pink cream
  • Add in the powdered sugar and beat until peaks are formed

Assembly and Garnish

  • Before starting to assemble the cakes, cut the 5 strawberries into slices
  • Use a circular cookie cutter to cut out circles from the cake pan.
  • Assemble the cakes with 3 cake layers into a mini tiered cake
  • On the first layer, use a spoon to pour champagne onto the cake and let it soak in.
  • Pipe a layer of strawberry frosting after the champagne
  • Repeat these two steps until the top layer.
  • After piping the frosting on the top of the cake, garnish with the sprinkles first and strawberry slices.
