The BEST Champagne Raspberries with White Chocolate to Make for Your Next Party

This recipe post is about how to make the best champagne raspberries drizzled with white chocolate.

This recipe has to be my favorite alcohol infused recipe. Firstly because its so simple, second because it has chocolate, and third because it has champagne!

Crazily enough, I am not a huge fan of raspberries, but once I made this recipe, something about the slightly sour/sweet taste of the raspberries mixed with the champagne and topped with sweet white chocolate makes the combination SO GOOD.

As a self taught baker, I love being in the kitchen trying new dessert recipes, ones that are simple enough for anyone like me, who hasn’t gone to school for culinary arts. These champagne raspberries are the perfect addition to a dessert table at the next party you throw.

Let’s hop right into it!

Prepping the Champagne Raspberries

First things first, grab your strawberries and rinse them off. Make sure to pat them dry afterwards before you put them in a bowl.

Because fruits like raspberries hold a lot of water, you want to remove some of that so the champagne will better infuse into the fruit.

Next pour in the champagne. 1 cup was enough for myself and the type of bowl I used, but if you have a wider or narrower one, feel free to add more or less.

Now you want to cover the bowl up with some plastic wrap and put it into the refrigerator for 30 minutes.

Melting the White Chocolate

While you wait for the raspberries to soak up all that alcohol goodness, you will want to start melting the white chocolate.

You can really choose any type of white chocolate to melt, but I find the blocks of chocolate or melting chips are the best for the smoothest white chocolate.

Put the chocolate in a bowl and microwave at 30 second intervals, stirring in between, until fully melted.

Or, if you would like to use a double boiler, take two pots that can sit on top of each or a bowl that can sit on top of a pot. Put some water in the bottom pot about 1 inch from the bottom of the pot and put the bowl or pot with the chocolate inside on top. Use medium heat to boil the water under, and stir continuously until melted.

White Chocolate Drizzle

Now that 30 minutes is up, it is time to take our champagne soaked raspberries and drizzle the white chocolate on top! (Which is personally my favorite part :))

You will drain out your raspberries and lay them out onto parchment paper. Make sure they are as separated as possible as it makes them easier to break off residual white chocolate after they harden.

To drizzle, you can simply use a spoon, dipping it into the melted white chocolate and dragging it back and forth over the raspberries.

If you happen to have a piping bag or Ziploc bag on hand, pour the white chocolate in that. Snip the end and use that to seamlessly drizzle the white chocolate over your raspberries. I find this eliminates some of my mess, because I am a 100% MESSY BAKER.

To finish up this recipe, if you are impatient like me, I throw these bad boys into the freezer for 5 minutes. The white chocolate will harden on these champagne raspberries very quickly.

Then you can serve them right away or put into an airtight container and put them back in the freezer.

I am a wimp with sensitive teeth, so I make sure to let mine thaw before indulging in this delicious snack or putting out for anyone else, but to each their own!

These are a great dessert table idea, so one way to dress these finished champagne raspberries up is to throw them in a plastic champagne glass. They are beautiful as serving dishes, and please anyone’s aesthetic mind.

Champagne Infused Raspberries

Prep Time 45 minutes

Equipment

  • Bowl
  • Plastic Wrap
  • Pan
  • Parchment Paper

Ingredients
  

  • 1 6oz. container Raspberries
  • 1 cup Champagne
  • 1 bar Melting White Chocolate

Instructions
 

  • Rinse the raspberries thoroughly under cold water.
  • Pour into a bowl and then add the champagne into the bowl, so that the raspberries ar fully covered.
  • Cover with plastic wrap and put in the refrigerator for 30 minutes.
  • While you are waiting, melt the white chocolate over medium heat in a double boiler until melted or in the microwave at 30 second intervals until melted.
  • Drain the raspberries from the champagne and lay them separately on parchment paper.
  • Drizzle the white chocolate over the raspberries and put in the freezer for at least 5 minutes to harden.
  • Break apart and serve or store them in a tight seal container!
